pizzelles are a traditional italian cookie
and delicious.

3 eggs (i used ener-g egg replacer)
2 tsp. baking powder
1 tsp. vanilla
1 3/4 flour
1/2 c. butter melted (i used Earth Balance)
3/4 c. sugar

beat eggs and sugar. add cooled melted butter
and vanilla. sift flour and baking powder and
add to egg mixture. batter will be stiff enough
to drop by spoon. batter can be refrigerated to
be used at a later time.
